So it did eventually get fixed. The dealership had my car for 3 weeks while they corresponded with MG UK about how to sort it. In the end they just replaced the A/C compressor. And the system has worked without issue ever since. It’s taken me a year to get sorted!

Which software did you just get that's fixed the issue? Mine's getting done on Monday so I need to make sure it's the correct version. Is it R67?
