My understanding is that the supplied SIM has a very low data allowance. Can I replace it with a cheap Giff-Gaff or something so I can watch YouTube or whatever?

I'm getting a new phone and I'm wondering if I can use my old phone, without a SIM card but connected to the car's Wi-Fi hotspot, to run Google maps etc. in Android Auto on the infotainment screen?

Given the recent US articles where car manufacturers are now supplying vehicle data to insurance companies and it is having a real impact on a persons premiums (speed, braking, mileage etc). I was wondering if there is a way to disable the in car sim which I assume is the way vehicle data makes...
