Silly question, is there any way the passenger can adjust the radio volume without interfering with the steering wheel while I'm driving or asking Voice Control to do it (not tried that yet)

Yes, it can be set up in the "home screen", where you can have buttons for ADAS, AVM, Sport mode and so on. Go in to "more" and there will be a slider or you can edit that page and add a volume slider
