I am glad to conclude on my end it was just the release candidate version beta of 26.3 that was the issue. Have also tested the latest 26.4 public beta can confirm -- iPhone 17 PM CarPlay is working (again) on the ZS '19 model.
As an update found on another forum case confirmed on a different 2019 ZS EV — same conditions: iPhone 17 Pro Max, iOS 26.3 RC, wired CarPlay. So far two of us with the same issue.
Only confirmed by cable, if issue persists seems like Wirless dongle might be considerable.

With Apple rolling out iOS 26.3 publicly mid-February, sharing this as a precaution to take with updating. Since installing the beta, CarPlay is completely broken for me.
