Good point. There’s normally only 2 of us in the car. We sometimes have the grandkids as well but perhaps that hasn’t coincided with adverse conditions😊
Perhaps it depends on where you live. I’m in the uk and leaving it on auto I have very few problems with fogging up. I occasionally use the front and rear window demist functions, if necessary, with the physical buttons.
I too just leave it set to 21C Auto and it works perfectly for me all year round. I occasional nudge it up or down 1 degree with the right hand joystick, but very rarely. I’ve never had a car where the cabin heating works so well.

I'm using the ad-ha/mg-saic-ha: MG SAIC Custom Integration for Home Assistant. There are pros and cons to the two integrations but I'm surprised the one you are using doesn't have the charging_power sensor. Perhaps ask on the github page for that integration.
I find that what ever colour car I have it shows the dirt worse than others in the street. I’m sure it had been cleaned when I bought it 12 months ago. Is this covered under the warranty?
