In my experience you can use one-pedal in Sport mode and it regenerates just as much as in Normal mode. In snow mode you are right: there is hardly any regeneration and one-pedal is not available

For a starter you might charge your battery up to 85 - 90 % instead of full. I also find it disconcerting when your one pedal mode suddenly behaves differently. I normally charge up to 80% to avoid this behaviour
