I got a notification on my phone this morning that said "Your VIN xxxxx vehicle has been unbound successfully."
I haven't been in the car since Monday and haven't opened the app since then either.
Anyone got any ideas?

Strange. Sounds like someone proved to MG that they had taken ownership of the vehicle so MG have unbound it.

Were you previously bound to the car?

If you go in the car, can you just re-bind it?

I would re-bind it ASAP before someone else does.
