Also can it be changed to 24hr digital numbers as it is very bright at night?

Yes it's under unit settings off the top of my head
You can also dim the dash using steering wheel arrow buttons

I seem to remember, if you place your finger at the top of the info screen and swipe down, it will reveal another menu hidden behind it.
I an sure this quick menu gives you the option to dull or turn off the screen ?.
The car needs to be in READY mode of course.

That will be the entertainment screen for the dash it's the steering wheel arrows there is a high medium low option

Yeah - This gives access to reduce the brightness level of the infotainment screen, not the dashboard binnacle.
That is done via the buttons on the right hand side of the steering wheel.
