Long pressing the shortcut key completely turns off/on the climate system. So do this before you turn the car off. The next time you get in the car, as long as no other conditions are missing, the car will start in EV mode.
Drove in full EV yesterday with HVAC off. The car stayed in EV mode after each restart. Put the car on the the charger overnight and started this morning and it was in auto mode but in EV.
