Any ICE cars before a long trip I would check the water, oil and levels and do lots of checks everywhere.

What should we check on an EV before a long trip?

What should tire pressure be at ideally?

Is the app accurate? It says 2.6bar on all of them but they look a tiny bit low

The coolant levels, brake and washer bottle fluid still need checking.
The tyres should be 2.5bar/37psi all round when unladen but increase the rears to 2.78bar/41psi when laden. Check them with an accurate pressure gauge as the pressure monitors can be a bit inaccurate.

The owner's manual has all of this.

But frankly on a modern car, I let the sensors do the work. Even ICE. If the oil's low, the dash will warn you.

My MG4 tyre pressure dipped to 2.3 in the cold, and the dash warned me. (2.5 is advised. 2.7 at the back if loaded)

Check battery state of charge, know where the charging points are you want to use, have a plan B.
Check your have your type 2 cable, last resort.
It will cost you more than a ICE car to run on long trips. And finally…

Chill and enjoy!!??

In case you haven't found it yet - ABRP and its corresponding phone app are good for planning your charging stops. It'll find routes with ultra-rapid charging stops, and if (when) you deviate from the plan, will adjust. And it can help you find lunch/whatever near chargers.
