I need to leave my car parked up for two months and seek advice on what battery level it's best left on and if perhaps on a low amp granny charge. Appreciate guidance.

50 -60% is what they will be charged at when they are on the ship from shanghai for 2 months at sea. basic rule for lithium is dont store fully charged or fully discharged, somewhere in the middle is perfect
