Middle right hand steering wheel button, then joystick to the left.

In reverse order:
2. You can't
1. Settings, Voice, Greeting switch to Off

The user manual is also stored on the cars screen, But you'll get backache, eye stain , and finger strain using it, but its available if you are stuck for an answer.

I’ve tried and tried to switch off the blinkin’ welcome voice (2019?!) but it won’t go away…

I take it you've tried using a custom greeting and typing in a blank space?

Ahhh… no, I tried the obvious and typed a silly phrase, which had no effect I’ll try the space!
