So my iSmart app reads that the battery level is 71% - has anyone ever at this level gone ok add 30% and what would happen ?
Also what level do people recommend charging to: 75%, 80%, 90% or 100%? Just trying to understand before I lower the life of the battery.

With 71% already in the battery, telling Ohme to add 30% will mean it charges up to 100% and then stops. Ohme doesn't integrate with the MG iSmart app so cant tell how much the battery actually has. (I usually apply an extra 5% anyway to my intended target to be on the safe side).
LFP batteries are far less sensitive to degradation and actually the advice seems to be to charge to 100% once a week so the management system can calibrate itself, the battery is very likely to outlast the rest of the car so don't worry about it.

I’ve charged my car to 100% quite a few times now by just calculating how much charge needs to be added. However I notice that as the battery charges there is a discrepancy between percentage of charge added according to the Ohme app and MG iSmart app. The MG app always seems to show a higher percentage (even if I start at 0% battery). The other thing that I’ve noticed is that the battery management system doesn’t seem to stop the Ohme charger once it reaches 100%. The MG app can show 100% for over 5 minutes but the car still seems to be accepting charge. Has anyone come across this before?

This happens balancing the cells, good for getting a better estimate of range and better for the battery as it reduces the risk of over discharging the low cells. On my NMC battery this can take half an hour or more after it has reached the desired charge level, just leave it charging (balancing) until the car reports charge complete.
