In both a domestic / home / industrial setting and even in cars etc.
Apparently there are vegetable oils contained in the make up of the plastic coating process of the cable.
This is used to increase the flexibility of the cable.
The rodents can smell / detect the veg oil and this is what causes them to nibble and eat it !.
