When I charge my ZS EV it shows 100% charged at 204 miles instead of the 279 miles originally. Is this due to winter weather or something else?

Yes and that both trip metres have not been reset

Is your HVAC still turned on from your previous journey by any chance ?.
Before your next charge, reset BOTH of your trip meters to zero and ensure you have your HVAC fully turned off !.
Now fully charge, I bet you get more than 204 miles of predicted range now !.

Just remember that the 204 miles range is more accurate as it takes your driving style and temperatures in to account this is why I don't reset my 2nd trip counter I like to see the realistic range to my driving style not the unachievable one that just looks good

I find it much better to drive by % charge remaining. The predicted range is just a guess by the car. The long journeys I've done so far, I subtract the predicted range from the sat-nav range and it gives you an accurate prediction of range left to within a couple of miles.

What is your m/kWh showing as?
During the summer I get 4.3m/kWh but during the winter 3.3m/kWh and that went down the 2.9 during the real bad week we had last year.
