If an EVSE is plugged into the car then yes it should enable you to do that.
There is a switch to start/stop charging and you can set the charging rate and scheduler as well:

ah ok ... didn't realize there were 2 options ...I think @wattmatters uses the addon which is why he didn't understand your question about intervals.
I use that as well - it's more difficult to install but is more powerful than the custom integration.
So how do you turn charging on and off with the custom integration?
I don't have those. I'm using the SAIC MQTT Gateway (Python) add-on.the values that you can configured at first :
